Governor Fitzroy's cook, she got into big trouble for selling food from the back of Government House. This remarkable woman, who weighed in at 310 kilos, effectively set the blueprint for the Australian diet of baked dinners, economical puddings, and heavily iced cakes. Later in life she began her own catering company and is credited with inventing Monte Carlos and Sao (short for Sao Paolo) biscuits.
Granny Smith
World's first example of genetic food modification. For Australia's first great inventor we go back to 1868 when a Sydney woman, Marie Ann Smith, cultivated a seedling apple which was the fortuitous result of a chance scattering of seeds. Now one of the world's most popular fruits, the Granny Smith apple has been grown commercially throughout the world since 1912. For every apple sold, Marie Ann Smith and her children still receive royalties.
William Dampier
Dampier was Australia's first baker, who, being a health fanatic in the style of the Kellogs brothers, popularised the bread made in hot ashes that still bears his name.
